What's for dinner?

So, yesterday was Monday.

And we started back to school.

And I was exhausted.

But I cooked.

Not until after 4:00 though. So I had to think quick and easy. Unfortunately, that means food that comes from bags, boxes and cans. After my 3 months out of the kitchen, I discovered some rather scary things in my pantry.

Tortillas: 2 bags. Soft, pliable, no visible defect. Expired the beginning of Oct. 07.

Cream Gravy from a pouch: I wanted this with our dinner. I made extra potatoes and chicken in hopes of having the left overs with the gravy. Made the cream gravy from a pouch by adding water. Something didn't smell just right. Then, something didn't look right either. Instead of white and creamy, it was looking yellow and sick. Found the "best if used by date"... Nov. 04!!! Oh my!

I still have LOTS of chicken and potatoes.

I also found multiples of several other things. See, my wonderful husband has been doing the grocery shopping since I've been down and out. I'm so thankful and would like for him to take over this chore permanently but his preparation for shopping needs a little "tweaking".

There are 3 unopened boxes of strawberry oatmeal. (That's like 36 packages of strawberry oatmeal.)

There are 10 boxes of macaroni and cheese. (Update: I went back to the pantry and found more boxes of mac n cheese... total: 16 boxes!!!)

There are 4 BIG cans of sweet potatoes. (For the record, that is one of his favorite dishes that his mother and grandmother make for him... key words: mother and grandmother.)

There are 4 cans of mixed veggies. Canned green beans, we eat. Mixed veggies only send my kids into orbit. It's not worth the fight.

I'm looking forward to the next food drive. I'm all set!

So, back to dinner. I thought ahead this morning. As I was pulling out my diet Pepsi, I also pulled out stew meat from the freezer. The stew is cooking in the Crock Pot as I type. This leads me to the reason for this post...

LOVE the crock pot...
Pot roast - seasoning bag, can of cream of mushroom, roast, carrots, potato, and an onion.

Mexican pot roast - roast, jar of salsa poured on top. Leave it. When it's done, shred it and drain the juices. Serve on tortillas like a taco or over rice with the juices.

I could go on and on and on...

Tonight? Cereal. Busy night. We ate dinner for lunch. Pioneer Woman's chicken spaghetti. The absolute best I've ever eaten.

Oooo... I saw that recipe the other day. I love the recipe I have for chicken spaghetti so I'm afraid to try another... but I just might have to! Since you could go on and on with Crock recipes, I'd love to have some more! I already got the mexican roast from SF... it's what she made for us when Hgirl was born. I'll get a roast next trip to the groc. store and try that one. (Never tried it with the cr. of mush.) What else???

That is too funny!! At least you have food in your pantry, since the kids have gotten married and moved out, we find it easier and cheaper to eat out. So, take out is for dinner and if I cooked my favorite crock pot meal would be beef tips and rice.

We generally have Mom's Meals for dinner....a perk of working there. However today I was going to try and recreate a Mom's Meal that was one of our favorites, using frozen bread dough. I set the dough out this morning before we left for school. Usually when we use it it is HUGE when we get home after school. Today when we got home it was flat. Eeewy and flat. I, too, checked the date. It was supposedly still good, but obviously it wasn't.

So I made a huge pot of spaghetti with fettucini noodles. It was yummy with sausage in place of hamburger meat! Too bad most of it is left as the mister is STILL waiting on a jury!

You need the pantry police to come clean out and reorganize so you can take stock and RESTOCK. Favorite crockpot meal - there are so many! Potato soup, taco soup, roast with carrots and potatoes, crock pot chicken and on and on and on....

I can give you about a dozen ideas for using up those mac and cheese boxes and the sweet potatoes as well... Just remember, I'm your mother-in-law and always have GOOD ideas.....
